I don’t overbook my kids. Isaac is doing spring baseball which practices two days a week. Both Eli and Isaac have Hebrew school one day a week, and Levi generally goes along for the ride. For the most part, we come home after school, have a healthy snack, do homework and play a little tackle football on the front lawn.
On those rare days when we race home from school, create chaos in order to get to the next thing, I like my kids to have a healthy snack. Some days it’s nachos using organic chips and organic cheddar with chopped jalapenos, others it fruit smoothies and some sliced turkey roll ups, and this past week, I made mini sliders using ground, organic chicken.
A few months back, I had found some whole wheat slider buns at Whole Foods. I didn’t see them again, until the other day. I snatched them up and picked up some really good pickles. I slathered the buns with my homemade ketchup(recipe to come) and served these to my boys with some apple slices. These are tasty and the kids didn’t miss the beef.
Chicken Burger Sliders
Ingredients
1 lb. ground, organic, dark meat chicken
2 egg whites
1 tsp. water
1/2 cup plus 1 Tbsp. dried bread crumbs
3 Tbsp. grated white onion
3 Tbsp. fresh parsley, chopped
2 garlic cloves, chopped
1 1/4 tsp. sea salt
1/2 tsp. ground cumin
1/2 tsp. herbs de Provence
2 Tbsp. coconut oil
Instructions
• make a paste with the egg whites, water, bread crumbs, parsley, onion, garlic, sea salt, cumin, and the herbs de provence.
• add the chicken and mix with a fork. don’t over mix.
• shape into small, little patties. line a plate with wax paper. put patties on the plate and refrigerate for 3o minutes.
• heat grill pan. using a paper towel, rub the coconut oil over the grill pan. when pan is good and hot, place sliders on the pan cook until you see heavy grill marks. flip and cook until completely done.
• place on buns, serve, eat! Enjoy!

Curious how you get the meat to bind – my turkey burgers fell apart on grill this week!
HI Stranger! The mixture can be a bit slimy, and when that happens, I add a little extra bread crumbs. Plus, I think sticking them in the fridge a bit to firm up helps. Miss you! x

Hi Shea! If you give them one or two, it is a sufficient meal and then they tend to eat a bit less at dinner time!
These are perfect after school snacks (or anytime snacks or dinner for that matter!!) Good for you for not overscheduling your kids!! There is so much pressure out there to do it and it takes discipline not to but I truly think most kids do better with a less structured schedule! There is plenty of time for that when they get older!
I tend to be a bit of a homebody, so driving in traffic around at what used to be my “nap time”(that 3pm hour), is not the place I want to be. I so prefer, an at home yummy snack, a game of horse, and a little lego building!
These little burgers are so cute and looks so good. It’s good to have a mom like you, who’s really taking care of what the kids are eating!

These look great. The perfect snack size! I am going to have to look for those buns at my Whole Foods. I just used one of those Deli Flats for my chicken burger tonight. I “discovered” the deliciousness of ground chicken for things other than fried wontons this past year. It’s really rather versatile, isn’t it? It’s become a staple and goes so well with bold flavors.
Fran, the Whole Foods are not consistent. One Whole Foods never has them and the other one sometimes has them. I have been known to get mini challah rolls at the bakery and that is a pretty darn good treat as well. If you have just discovered ground chicken, I am going to send you an amazingly light and delicious recipe for minced chicken in lettuce cups! It will become a staple meal!xx

susan, if i wanted to rub oil other than coconut…any suggestions?

Hi Linda! You could use a little olive oil. You can even do half olive oil, half butter – would be kind of delicious! Also, if your mixture is a little too wet(which sometimes happens)add extra bread crumbs or even a little panko bread crumbs. Let me know how they turn out!

Hi Susan, these look so good! I wonder if I can bake them say at 450F in the oven instead of grilling them, that’s what I do with my turkey meatballs? Can’t wait to try this recipe. Thank you for sharing.
I also, bake my turkey meatballs and had never thought of baking these. I think it’s a really good idea. What you might want to do, is bake 2 of them to test and then go from there. Let me know how they come out!

We’re looking for a good DIY whole wheat slider bun recipe. Although we live in Brooklyn, Whole Foods is a schlep to get to and I’ve struck out at finding them at Trader Joe’s. I’ve seen them from time to time elsewhere but they’re always loaded with high fructose corn syrup and other junk. Do you have access to a good recipe? I could link back to it on my blog.
