Summer has arrived. My kids have declared that they will do alot of “nothing” and plan on using their bikes more than ever before. I have vowed to not turn on my oven and instead, use the barbeque as much as possible.
A summer meal for me means very, very little prep. Having a jar of homemade barbeque sauce on hand allows me to do just that. My prep for these drumsticks consists of patting them dry, sprinkling them with a bit of Celtic sea salt and some pepper, and covering them with the sauce. They marinate all day and all that needs to happen come dinner time is to heat up the grill. No recipe required. Cook the chicken according to your grills handbook.
A big salad and these potatoes is all one needs. And maybe a cobbler or this S’mores pie. Dinners as easy as this allows me to compile my Summer 2014 Bucket List which I will share soon. What’s on your summer bucket list and your dinner table?
